mix the vinegar, water, sugar and salt in a small pot and heat until it is just begining to boil

Set the sauce aside and slice your peppers into small rings. if you want it hot and spicy, then leave the seeds in. if you want it milder (but just as tasty!) then cut the slices about 1/2 way up. Take the blunt end of your knife and remove the seeds. The seeds are what hold most of the heat in most peppers

in a sealable container put in the sliced peppers and pour the liquid over them.

let them sit over night, but the longer they sit, the better. just like wine!
