Steps

Peel and rough chop 2 sweet potatoes

Dice peppers and shallot

Heat 2 tablespoons of olive oil in a large non stick skillet

Add shallots and peppers to skillet sprinkle a teaspoon of sugar to carmelize

Add sweet potatoes and 1cup of water

Cover and simmer till potatoes are cooked but firm

Add 2 cans of black beans and mix well

Simmer uncovered for 5 mins and serve or serve cold for a picnic
