Very good, healthy side. Have served it a couple of times, once warm, once cold; delicious either way. Nice twist on sweet potatoes, and a healthier alternative to traditional potato salad.

Ingredients

  1. 2 1/2 lbsweet potatoes, cut into 3/4 in chunks
  2. 2 tbspolive oil
  3. 1 tspcoarse salt
  4. 1/4 tspground black pepper
  5. 2 tbsporange juice
  6. 1 tbspminced fresh ginger
  7. 2 tspdijon mustard
  8. 3scallions, thinly sliced, crosswise

Cooking Instructions

    Preheat oven to 425° Fahrenheit. On a nonstick rimmed baking sheet, toss sweet potatoes, with 1 tablespoon olive oil, salt and pepper. Roast until fork tender; about 35 minutes.

    In a large bowl, whisk together orange juice, 1 tablespoon olive oil, ginger, and mustard.

    Add scallions and potatoes; toss to coat with dressing. Season with salt and pepper, if desired. Serve warm, cold, or at room temp.
