8 mediumsized fresh ripe peaches, peeled and chopped
3 tbspgranulated sugar
2 cupor more chocolate chip ice cream, or vanilla if you prefer
8 ozof clear soda, I used fresca but any will work. You may need more or less depending on the size of your glasses.
1FOR GARNISHING
1 cupsweetened ehipped cream
1/2 cupgrated chocolate
4 sliceof fresh peach

This recipe makes about 4 large sodas, but it really depends on the size of your glasses, adjust amounts according to your glass size.

Combine chopped peaches with sugar, mix well and let sit at room temperature to release juice from peaches, about 20 minites

In a large glass, place a scoop of ice cream, cover with chopped peaches, add another scoop of ice cream then chopped peaches again. Leave some space to add soda, it will fizz some.Add soda to almost fill glass.

Garnish with whipped cream, chocolate shavings and a peach slice.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
