Mexican White Cheese Dip - Irvixen Style

I tried several recipes to
Match my favorite Mexican restaurant's wonderful cheese dip. You can make this more basic by omitting the sriracha and sweet chili sauce, while adding more pickled jalapeño juice. When I found one I liked, I adjusted to my tastes and started adding things I thought would add to the flavor. I'm on a big sweet chili sauce kick right now. Not your typical cheese dip - but so tasty- I bet you will love it!

When I found one I liked, I adjusted to my tastes and started adding things I thought would add to the flavor. I'm on a big sweet chili sauce kick right now. Not your typical cheese dip - but so tasty- I bet you will love it!

Cube cheese and mix with milk and water in large, microwave safe bowl. Microwave on high until completely melted, stirring every 2 minutes (mine took 8 minutes).

Stir pickled jalapeño, jalapeño juice and siracha if using, into the cheese. Serve up an individual portion, drizzle with sweet chili sauce if using and serve with tortilla chips of choice!
