Creamy Pasta Alfredo With Shrimp Scampi

I love comfort food! I try to eat mostly vegetarian, non dairy, some fish and eggs. This dish is so creamy you don't miss the dairy. You wouldn't know it was cauliflower. You can leave out the nuts if you want, and substitute some avocado. You can substitute the shrimp for mushrooms, or broccoli. The Alfredo would be good on lasagna or pizza...enjoy!!

Ingredients

  1. 1 boxFavorite pasta
  2. 1 bagof frozen uncooked shrimp
  3. 1 bunchCilantro
  4. 1Lemon sliced
  5. 1/2 cupCashews
  6. 3 tbspNutritional yeast
  7. 1 tspSalt
  8. 1Miss dash seasoning to taste
  9. 1Braggs aminos to taste
  10. 1 headof cauliflower chopped
  11. 1 tbspChopped parsley or cilantro
  12. 1 cupVeggie broth
  13. 1/4 cupEarth balance butter spread
  14. 3 clovegarlic crushed and chopped
  15. 1/4 cupOlive oil

Cooking Instructions

30 mins
  1. 1

    Steam cauliflower in the one cup of broth on low, covered for 10 minutes

  2. 2

    In bender combine nuts, salt, yeast, olive oil, cauliflower and broth. Blend until smooth. Pour over cooked pasta, and season to taste.

    In oven, 350°F, cook shrimp butter lemon garlic, until done about 20 min. Remove lemons and add shrimp and most of sauce to pasta. Top with cilantro and enjoy!!
