Ingredients

  1. 3 1/3 lbsoxtail (about 1.5 kg)
  2. 2carrots
  3. 2 clovesgarlic
  4. 1onion
  5. 1red bell pepper
  6. 4 1/4 cupswater (1 liter)
  7. 2 cupsred wine (500 ml)
  8. 1 teaspoonginger (about 5 grams)
  9. Flour

Steps

  1. 1

    Dredge the oxtail pieces in flour.

  2. 2

    Brown the oxtail.

  3. 3

    Peel the onion, garlic cloves, and carrots.

  4. 4

    Chop the onion and red bell pepper.

  5. 5

    Slice the carrots.

  6. 6

    Mince the ginger.

  7. 7

    Sauté the onion, carrots, and red bell pepper until softened.

  8. 8

    Add the ginger and garlic.

  9. 9

    Cook for 5 minutes.

  10. 10

    Add the oxtail and red wine.

  11. 11

    Cook for 10 minutes.

  12. 12

    Add the water, cover, and simmer for 2 1/2 hours or until the oxtail is tender.

  13. 13

    Remove the oxtail and strain the sauce through a food mill or fine sieve.

  14. 14

    Simmer the sauce with the oxtail until it reaches your desired thickness.
