Gujrati Methi Muthia are deep fried snack made of mixed flours, fenugreek leaves and few spices. They go well with any sweet and spicy chutney.

Gujrati Methi Muthia are deep fried snack made of mixed flours, fenugreek leaves and few spices. They go well with any sweet and spicy chutney.
Steps

Take aata,besan,makki ka aata, suji, sugar, salt, haldi, red chilli powder, baking powder with green chillies in a bowl. Mix it well.

Now heat oil in a pan. Add jeera and saunf. Cook for 30 sec. Add finely chopped fenugreek and cook it for 1 min. Switch off gas.

Add fenugreek leaves in the mixture. Mix it well. Rub it with your fingers. Mixture should be like bread crumbs.

Add 1-2 tbsp milk (no need to knead dough) now make the muthias with the help of your palm and fingers.(Take dough in your palm and press it by your fingers). Shape all muthias same way.

Heat oil in a kadai and deep fry muthias. Keep moving them around for even browning, fry till they are crisp and golden brown from all sides.

Drain on an absorbent paper. Serve hot with green chutney.
