Wash potatoes,cut into 1 cm dice, rinse

Place in saucepan, barely cover with cold water.

Bring to boil, then simmer for 5 minutes, you don't want to cook through, just soften, drain.

Put the olive oil In a wok or frying pan over medium heat.

Add potatoes and season with salt and pepper

Fry over medium heat until golden and cooked through.turning regularly.

Serve. Goes with meatloaf, bacon pudding, toad in the hole etc.

You can use chilli or garlic oil to fry, add chopped bacon or ham or chopped fried onion (or cheat and use crispy salad onions added just before serving)
