Ingredients

2 servings
  1. 2lamb shanks
  2. 2 tbspolive oil
  3. 2 tbspbutter
  4. 2 tbspflour
  5. 3 largecarrots chopped
  6. 2 largeonions quatered
  7. 4garlic cloves
  8. 2bay leaf
  9. 2parsnips chopped
  10. 1 cupbutton mushrooms
  11. 1 tbsprosemary
  12. 2 tbspthyme
  13. 4 pintshot chicken stock to cover lamb
  14. salt and pepper

Steps

  1. 1

    Heat oil in a oven proof casserole pot, sear lamb shanks until golden, remove and set aside.

  2. 2

    Add the veg, herbs and butter to pot mix well and saute for a good ten minutes, add the flour to create a roux. Add hot stock and stir well.

  3. 3

    Return lamb shanks to pot cover and put in a preheated oven 160℃/ 320℉ for at least 3 hours until meat is super tender.

    Serve with some creamy mashed potatoes. Enjoy
