Combine all ingredients except the oil in a bowl, beating thoroughly. Add the oil, one teaspoon at a time beating well after each addition.

After all the oil has been added, beat one more minute or until mayonnaise is thick enough to hold its shape when spooned out.

Note: Makes about 11/4 cup mayonnaise.
