Spaghetti, Brie & Broccoli Frittata

I never use a whole head of broccoli as a side vegetable, so I always have some left in the fridge. It goes lovely with brie, makung a taste so good, even meat-mad people will go for it!

I never use a whole head of broccoli as a side vegetable, so I always have some left in the fridge. It goes lovely with brie, makung a taste so good, even meat-mad people will go for it!

Put on a pot of boiling salted water to cook the spaghetti and a steamer to cook the broccoli (if you have a steamer that fits on your spaghetti pan, use that!) Light the broiler/grill to high.

Prepare your ingredients

Put on your spaghetti to cook

Put the broccoli stalks in the steamer and steam for 4 minutes, then add the florets at steam for 4 more minutes

Heat oil on low in a small non stick omlette pan and gently begin to cook the garlic in it

Drain the spaghetti and put in with the eggs in the bowl
- 7
Squeeze lemon over the steamed broccoli, and put that in the bowl, followed by the brie, salt and pepper

Mix everything in the bowl, then turn up the heat under the omlette pan and tip your mix in, flattening it and getting it evenly distributed with a wooden spoon or spatula

Cook over medium heat for 10 minutes, until browning underneath and set in the middle

Put under the grill/broiler for a further 5 minutes

Gently loosen the edges with a spatula (avoid using metal on a non stick pan) and turn over onto a plate, give the bottom of the pan a good tap if it doesn't come out straight away

Allow to set for a minute or two before cutting into quarters to serve.
