Ingredients

2 servings
  1. 2 smallzucchini
  2. 2 largemushrooms
  3. 4sundried tomatoes in olive oil
  4. 50 gramsblue cheese of choice
  5. 2jalapeños in oliveoil
  6. 1handful of salted cashew nuts
  7. 1 tbspof parmesan shavings
  8. 2 tbspDutch advocat opional ( similar to eggnog, though not the same)

  1. 1

    wash, clean and cut the zucchini into half.

  2. 2

    scoop out the center setting it aside for use.

  3. 3

    chop up centre, mushrooms,tomatoes and cheese

  4. 4

    cut the shavings of the parmesan

  5. 5

    mix all ingredients except the parmesan shaving and jalapeños , season with garlicsalt, spoon the mixture into the zucchini(courgette)

  6. 6

    add shavings and jalapeños and drizzle with some olive oil from jalapeños and tomatoes

  7. 7

    bake in oven until cheese is melted, golden brown and the zucchini are cooked.

  8. 8

    when cooked drizzle with the advocat if for an adult and serve.
