  1. 6chicken breasts
  2. 1/2large green pepper or whole small
  3. 1/2large red pepper or whole small
  4. 1medium sweet onion
  5. 1 envelopeTaco seasoning
  6. 1 canenchalada sauce or taco sauce
  7. 3/4 cupsalsa
  8. 1 cupdiced tomatoes (optional)
  9. 1 stickcrumbled chorizo (soft)
  10. 1/3 cupcilantro
  11. salt & pepper
  12. 1fiesta blend cheese (optional)

    It's just this simple. Clean & trim chicken & place in a large casserole dish. Season with the taco seasoning. Julien peppers and onions & spread over chicken. Chop cilantro & throw that in. Crumble up the chorizo & spread evenly throughout the dish. Pour in the enchalada/taco sauce & salsa to cover the chicken. If you want it more chunky, add the diced tomatoes. Salt & pepper to taste. Cook uncovered for about 45 minutes @ 400°.

    CHEESE PLEASE!!! If cheese is what you crave, add a fine shred cheese. I like a Mexican blend or fiesta blend of cheese, but feel free to use whatever cheese you want. Just plate the food & melt the cheese in either the oven or microwave. ENJOY!
