Pollo Mariachi

This recipe was inspired by my cousin who would try to have something cooked for me between work and school. She said she just whipped up something quick (which I like) and it was good enough to give it the attention it deserves! So with a little more effort, this is what I've come up with. Hope you all enjoy this as much as I do!

It's just this simple. Clean & trim chicken & place in a large casserole dish. Season with the taco seasoning. Julien peppers and onions & spread over chicken. Chop cilantro & throw that in. Crumble up the chorizo & spread evenly throughout the dish. Pour in the enchalada/taco sauce & salsa to cover the chicken. If you want it more chunky, add the diced tomatoes. Salt & pepper to taste. Cook uncovered for about 45 minutes @ 400°.

CHEESE PLEASE!!! If cheese is what you crave, add a fine shred cheese. I like a Mexican blend or fiesta blend of cheese, but feel free to use whatever cheese you want. Just plate the food & melt the cheese in either the oven or microwave. ENJOY!
