Ingredients

  • 1.5 kgWhole chicken
  • 1 tbspSalt or more
  • 2 tbspSumac
  • 1 tbspGround cumin
  • 1 tbspGround cinnamon
  • 1 tbspCayenne pepper powder
  • 1 tbspPaprika
  • 6-7 tbspHung curd
  • 5-6 tbspOlive oil
  • 6-7Garlic cloves minced

    Make deep slits across the chicken.

  2. 2

    Marinate it with all the spices. Cover and leave it in the refrigerator overnight. This is important.

  3. 3

    Preheat oven to 240 °.

  4. 4

    Heat a barbecue or chargrill pan to medium high and grill it for about 8 to 10 minutes until a bit charred turning it over every now and then. Baste it with oil before doing it.

  5. 5

    Transfer it to a lined baking tray and roast it until done.

    Serve it hot with Lebanese Garlic Sauce and Pita bread.
