Ingredients

  • 1 kg.Big Eggplant (roasted)
  • 2Onions - finely chopped
  • 3-4Tomatoes- finely chopped
  • 4-5Garlic cloves - finely chopped
  • 1 small piece Ginger - shredded
  • 2Green chilies- chopped
  • 1 Spring Onions - chopped (optional)
  • 1/2 cupchopped Coriander leaves
  • 1 tspGaram Masala (optional)
  • 2 tbscooking oil
  • as per tasteChilli powder & Salt

Steps

  1. 1

    How to roast egg plants-
    On a gas stove, apply some oil on the egg plant & put it directly on the heat; keep turning the sides till it becomes soft & tender; cook all the way inside. It should look chard from outside.
    Alternatively, you may also use oven instead of a traditional gas heat.

  2. 2

    Cut the egg plant in a half, apply some oil on the egg plant; and place it on a baking tray.
    At 220 degree for 20-30 minutes, bake the eggplant.
