Ingredients

  1. 2 lbGround beef
  2. 1 lbSpicy italian pork sausage
  3. 1 canRotel diced can toms hot w/ habeneros
  4. 1 canRotel can toms diced with green chiles
  5. 1 canCan of kidney beans drained
  6. 1 canSouthwestern black beans with cumin spice
  7. 1 canWhite beans or pinto
  8. 1 mediumOnion diced
  9. 3Minced serrano peppers
  10. 2Diced jalapenos
  11. 2 tspCumin
  12. 2 tbspHot chili powder
  13. 1Green bell chopped
  14. 1Yellow bell chopped
  15. 22 ozBrown ale or dark porter
  16. 1 dashCrushed oregano
  17. 1 tspMelaguta sauce (if possiable)
  18. 1Water to preferred thickness

Steps

  1. 1

    In large stockpot Brown beef then drain

  2. 2

    In same stockpot cook sausage then remove leaving fat

  3. 3

    Sautee peppers and onions until soft

  4. 4

    Add meat and beans

  5. 5

    Add remaining spices

  6. 6

    Add beer

  7. 7

    Cover and simmer over low heat for 30 minutes

  8. 8

    Add water to desired thickness or lack of n cook additional 1-1.5 hours
