rest eggs over night on side

remove eggs from fridge 30 min before cooking

place eggs in pot

fill with cold water to cover by 1 inch

add 1 tsp salt

cover pot put on high burner

as soon as u get big bubbles and steam move to cold burner

add 1 tbsp of vinegar

let set 30 min to finish cooking

cool in a bowl of ice water 20 min

gently crack egg all over on counter place back in water for 10 min

remove shell and membrane in running water

cut eggs and pull out yolks with a spoon

mash yolks with a fork

sprinkle with paprika
