Ingredients

  1. 3 1/3 poundsbeef
  2. 1large carrot
  3. 1large onion
  4. 2 clovesgarlic
  5. 1 cuptomato sauce
  6. 2 teaspoonstomato paste
  7. 1 cupwater
  8. 1/2 cupred wine
  9. 1little oil
  10. salt, pepper
  11. clovescinnamon,
  12. nutmeg, cumin, sweet paprika
  13. 2bay leaves
  14. 1little grape molasses

    Slice the onion into rings and place it at the bottom of the slow cooker. Finely chop the garlic and slice the carrot into rings, then add them as well.

    Cut the beef into pieces. Add a little oil to a pan and lightly sauté the beef on all sides until browned. Add the beef to the slow cooker.

    While the pan is still hot, pour in the wine and use a spatula to 'clean' the pan. This essentially captures the flavored oil and any bits of meat left in the pan, all the deliciousness! Add this liquid to the slow cooker.

    Add all the spices, the tomato sauce, the tomato paste, the water, and the grape molasses. Use a bit more spices than you would in a pot. As for the water, add as much as you like depending on how much sauce you want.

    In my slow cooker, I set it to automatic (which means 2 hours on high and the rest on low) for about 7 hours, and it turned out perfectly tender!

    The liquids I added before cooking were about halfway up the meat. After cooking, the meat was swimming in the sauce. Depending on what you want, adjust the liquids (this sauce is delicious).

    Serve with rice, pasta, or fried potatoes.
