Steps
- 1
Put dry pinto beans, salt & oil in a pressure cooker. Add water to well cover the beans. Soak overnight.
- 2
Cook in pressure cooker for 25 minutes. For more flavor and thicker consistency, cook beans in same water they were soaking. To reduce undesired gas (farting) after eating beans, drain water used for soaking and cover beans again with fresh water.
- 3
After beans are cooked, use potato masher to mash beans into a consistency with minor lumps/bean pieces
- 4
Mix in bacon grease, cheese and pickled jalapeno juice. If you can't find pickled jalapenos, you can also use juice from pickled vegetables, or the juice from a 4oz can of Heredez jalapenos
- 5
Taste and add more seasoning, jalapeno juice, cheese, or grease for flavor.
- 6
These beans are great refried!
