Preheat oven to 425. Set 2 cast iron cornbread stick pans in oven until hot.

In med. bowl, combine all ingredients except butter, do not overmix.

Brush pans with butter. Fill each mold with about 2 tbsp. batter. Bake until sticks are golden and toothpick inserted comes out clean, 12-15 minutes. Serve with additional butter.
