mix rock salt with tepid water

add 5 rounded tablespoons of gram flour to water and whisk

leave mixture to stand, the longer the better

before cooking add tablespoon of oil and stir well.

heat some oil in skillet.

when smoking add mixture and sprinkle with rosemary + garlic, or chorizo, or anything you fancy

carefully flip farinata, turn down heat and continue to cook for longer than expected until crisp but still a little soft in the middle

serve sliced like a pizza, with olives and white wine.
