1/4 tspcayenne pepper
6chicken tenders (about 1lb)

For chicken, lightly beat egg whites in one coating tray. Finely chop pecans with a food chopper and place in separate coating tray. Combine salt and cayenne pepper in small bowl. Slice chicken tenders in half lengthwise and remove white tendons. Sprinkle pepper mixture over chicken. Dip chicken into egg white, then into pecans, pressing pecans into chicken.

add oil to 12 inch skillet; heat over medium-low heat until shimmering. cook chicken 2-3 minutes or until deep golden brown. Turn chicken over and cook an additional 2-3 minutes or until centers of chicken are no longer pink.
