  1. 1Rotisserie Chicken
  2. 1small Onion
  3. 3Green Chili Peppers
  4. 1 canRotel
  5. 1 canNorthern Beans
  6. 2 canChicken Broth
  7. 2 tbspOlive Oil
  8. 2 tbspCumin Seed Powder
  9. 2 tbspChili Powder
  10. 1 tbspCayenne Pepper
  11. 1Salt and Pepper to taste
  12. 1 bagMonterey Jack Cheese
  13. 1Crackers
  14. 4 ozSour Cream

  1. 1

    Pull breast meat off rotisserie chicken and place aside.

  2. 2

    Finely chop onion and chili peppers. I

  3. 3

    Place olive oil and chopped onion in large sauce pan over medium heat. Saute until onions become transparent. (About 3 mins.)

  4. 4

    Add chicken, green chili peppers, chicken broth, northern beans, rotel, cumin, chili powder, and cayenne pepper. Bring to a boil.

  5. 5

    Reduce heat, and simmer for about 15 minutes.

  6. 6

    Blend in sour cream and remove from heat.

  7. 7

    Serve in a bowl with crackers and sprinkled monterey jack cheese. ENJOY!!!
