Ingredients

  1. 1 lbchicken breast, diced
  2. 1 lbground turkey
  3. 3 ozchipotle adobe - blended
  4. 1large onion
  5. 2 cloveroasted garlic
  6. 2 cloveminced fresh garlic
  7. 1 tbsponion powder
  8. 1 tbspgarlic powder
  9. 1 tbspchipotle powder
  10. 1 tbspchili powder
  11. 1 tbsppaprika
  12. 1 cupcooked pinto beans
  13. 1 cupcooked kidney beans
  14. 3 cupcanned Italian plum tomatoes
  15. 1 cupwhite chicken stock
  16. 1 tbspSriracha hot sauce
  17. 1ripe avocado
  18. 1 tbspolive oil
  19. 1 tbsplow-fat shredded aged cheddar (optional)
  20. 1Kosher salt
  21. 1Pepper

Cooking Instructions

    Season the chicken breast and ground turkey with kosher salt and pepper.

    Heat olive oil in a large pot over high heat, and then add chicken and turkey.

    Cook for 10 minutes, until brown.

    Drain off the excess oil and add dried seasonings.

  5. 5

    Remove the protein and set aside.

    Cook the onions and garlic until tender, about 5 minutes.

    Add the puréed chipotle adobe and roasted garlic.

    Return the meats to the pot and the remaining ingredients.

    Cook over a slow simmer for 2 hours.

    Taste and add final seasoning of salt and pepper.

    Finish with sliced avocado, non-fat sour cream, sliced scallion, cilantro leaves, and low-fat shredded aged cheddar (optional).
