1 sliceYellow Onion
1 tbspolive oil, extra virgin
1salt and pepper to taste

Peel and dice Potato into 1 inch cubes

Place in microwave safe bowl, fill halfway up with water

Microwave for 5-6 minutes

Meanwhile, dice/mince onion slice

Lightly oil a medium pan. When Potato is done, combine with onion into medium pan. Set to medium heat. Cook for 10 minutes or until potato looks slightly fried

Add salt and pepper to taste
