Steps

Wash and peel the lemon and orange with a vegatable peeler.

Cut into very thin strips and place in a medium sauce pan with water.

Bring to the boil (about 5 minutes if you put in there very little water in the pan)

Take off the heat and let it rest for about 15 minutes.

Strain the zest under cold water and let it drain the water off in a sieve. Place the zest to one side.

In another sauce pan add one cup of white sugar and one cup of brown sugar with a bit of the boiled water used to boil the zests. Bring to the boil and let it simmer down stirring continuously.

After about 5 minutes. Add the zest to the pan along with some more zesty water. Keep stirring otherwise it'll burn and bubble over the pan

This roughly takes about 30 minutes however mine too a lot longer because I added extra sugar for a cake I was making

I had to add a small amount of extra water when I reheated it to be able to spoon it onto a cake so if you want to spoon it on to a cake straight away make sure the cake it already cold because it will harden almost immediately as soon as its off the heat.
