  2. 6 largeEgg Whites
  3. 1Ground Black Pepper
  4. 3 tbspTomatillo Salsa
  5. 1/4 mediumAvocado, sliced
  6. 1 tspextra-virgin olive oil

Steps

  1. 1

    Combine egg and egg whites in a medium bowl. Season pepper (if desired); whisk to blend

  2. 2

    Heat oil in medium skillet over medium-low heat.

  3. 3

    Add egg mixture; cook, stirring occasionally, for 3 to 4 minutes or until eggs are set.

  4. 4

    Top eggs with salsa and avocado.
