Ingredients

  • filling
  • 2 1/2 cupstrawberries
  • 2 1/2 cupRubharb
  • 1 1/4 cupsugar
  • 1 1/2 tbspcornstarch
  • 1 tbspflour
  • 1 tspvanilla
  • 1/2 tspcinnamon
  • 1 eachsmall lemon (zest and juice)
  • 1 tbspbutter
  • options
  • 1 eachmy perfect crust. Dont buy a crust, make mine! it will not disappoint!

Steps

  1. 1

    prepare pie crust. save half for top!

  2. 2

    preheat oven to 450°F (425 for you flatlanders)

  3. 3

    slice strawberries and chop Rubharb

  4. 4

    mix sugar, flour, cornstarch, vanilla, cinnamon into strawberry and Rubharb mixture.

  5. 5

    squeeze lemon half into mixture and add 1/2 tsp zest. mix until well combined and sugar mix looks like delicious lava

  6. 6

    pour into crust and dot with butter

  7. 7

    cover with other half of crust and brush with egg white wash, sprinkle with bakers sugar crystals because awesome.

  8. 8

    bake at 450 for 15min, reduce to 400 (375 low alt) and bake another 45min or so.
