
Potato, Onion & bacon soup
Steps

Peel and chop the potato's and Onions and put to one side

Melt butter in heavy saucepan then add potato's and onions and mix into the butter until well coated

Cover will saucepan lid and leave to simmer for 10 minutes.

In seperate saucepan bring stock to boil.

Fry 2 slices of bacon and add to potato's and onions along with chicken stock, simmer for further 15 minutes
- 6
Pop the soup in the blender with milk and blitz till smooth (this is optional as some people prefer lumpy :)

Fry the final slice of bacon and chop into small pieces, scatter on top of soup and serve
