
Chili Pasta

I was in a crunch to make dinner and, since our shopping day was in a couple days, there wasn't much left in the cupboards. I found most the ingredients for homemade chili, but didn't have the time to do it justice. So I snooped around a little more and found some pasta and had a stroke of brilliance! Why not make the chili in a frying pan and serve it over pasta? And that is how this recipe was born, as with most of my recipes, out of desperation.

In a medium to large sauce pan, bring noodles to boil and cook to desired tenderness.

While noodles are boiling, dice and sauté onion. When onion is soft and translucent, add hamburger and spices (I used smoky mesquite, Montreal steak seasoning, garlic powder, and seasoned salt). Drain grease when hamburger is done.

Add the rest of the ingredients, the cans of beans and the tomatoes first. Stir well and bring to a simmering boil. Let simmer for 5 min and then take off heat.

Serve chili either over the pasta or mixed in with it.
