Sometimes, you just feel a little Mexican. This is an easy meal that lends itself to any number of 'tweaks'. Try it with smoked meat, hot peppers, minced bacon, diced olives or whatever you love. It's all fun.

Ingredients

  1. 1 lblean ground beef
  2. 1 packagesTaco Seasoning
  3. 1 canrefried beans
  4. 1 cancream of mushroom soup
  5. 4 ozsour cream
  6. 5each flour tortillas
  7. 1 lbcheddar cheese
  8. 1medium onion

Cooking Instructions

  1. 1

    Brown ground beef and minced onions in a large saucepan. Add seasoning and cook through.

    Stir in re-fried beans

  3. 3

    Blend sour cream with can of mushroom soup

  4. 4

    Layer the casserole. Start with half the sour cream/soup mix

  5. 5

    Add a layer of ground beef/beans

  6. 6

    Add a layer of grated cheese

  7. 7

    Place a layer of torn up tortillas on top of the cheese

  8. 8

    Repeat steps until all the ingredients are used up. Finish with a layer of cheese and top it with some fresh salsa

  9. 9

    Place in a 350°F oven for 30 minutes, or until cheese melts and bubbles

  10. 10

    Serve with shredded cheese, salsa, sour cream and avocado chunks.

This was delicious! I made it last night. Just one thing . . . there is no mention in the recipe of when to put in the taco season; I just put it in the ground beef along with some water and let it simmer.
