  • 6eggs
  • 1/4 cupmilk
  • 1 smalltomato, chopped
  • 1 smallonion, chopped
  • 1/4 cupshredded cheese
  • 1/2 cupspinach, fresh or canned, drained

    Saute onion and tomato for 3 minutes, set aside

  2. 2

    Lightly beat eggs and milk together

  3. 3

    Pour half into nonstick pan, cook on medium heat for 2 minutes til thick

    Add tomato, onion, and spinach

  5. 5

    Top veg with cheese

    Carefully fold omelet to 1/3 then fold once more

    Serve with salsa, or chopped veg.

    Flip over and cook for 2 more minutes
