Really juicy tastfull salad.

I decided not to garden this year. Thankfully, I have a generous neighbor who provides me with the bounty from his. He provides the cucumbers, I provide the salad. Sounds like a good tradeoff to me.Cucumber salad is cold, refreshing, and perfect as a side to any BBQ dish, but perfectly good on its own. A glass of rose doesn't hurt.

This is a recipe that uses up a lot of cucumbers. I wanted to make a western style salad that went well with pasta, so I combined some ingredients I usually have on hand.The sautéed bacon and olive oil becomes the dressing. It goes best with the cucumber if you think it's a bit too salty. The cucumber loses its raw flavor, and it becomes a very tasty salad. Great as a drinking appetizer! For 2 servings. Our local Thai place has a really nice cucumber salad that is very sweet. This is owr version of a cucumber salad that is not as sweet, with a pop of flavor from the pepper. We enjoy this during warmer months with various chicken or pork dishes. And now to find a decent peanut sauce recipe.... 🤔

My mother used to make a similar recipe when I was younger. I was never able to get the recipe from her so this is the best recreation of it.

This is a nice, refreshing side dish for a summer meal. I use cucumbers from our garden when possible, but it's just as good with store bought.

A German side dish or salad that often gets overlooked, but makes for a great accompaniment to most German meals. A great side too with grilled meats, especially with brats and chicken. It's very popular when “cukes” are in season / garden harvested, but year-round enjoyment when store bought should also be considered.
