Egg Vada Pav
It's a very mouthwatering breakfast.
Steps

Firstly boil the potato and mash it nicely. Then grate the cauliflower.

In the kadai/pan heat 2 tbsp oil and add ginger paste and saute well. Then add grated cauliflower and saute well.

When the cauliflower becomes soft then add turmeric powder, red chilli powder, garam masala powder, cumin powder, aamchoor powder, ajwain seeds and salt. Mix them very well. Cook until the raw smell from the spices are gone.

Then add boiled and mashed potato and mix them very well. Then add chopped cilantro and mix them. Stuffing is ready.

Now make small balls from the stuffing and make aloo-gobi paratha. Or else make flat shape balls for vada pav. You can keep the stuffing in the fridge for 4-5 days.

For vada pav make 4 flat shape balls. Heat the tawa/pan with little oil and bake the balls until they turn to brown.

In a small bowl whisk an egg with some chopped onion-ginger-green chilli and salt. In the pan heat oil and make omelette one by one.

Cut each bun from the middle.

In the tawa/pan heat some butter and bake the both portion of each bun.

In the same tawa/pan keep the lower portion of a bun and add 1 tbsp chilli sauce onto it. Then spread the sauce and add a flat shaped ball and add an omelette on it. Then finally cover with the upper portion of the bun. Serve it hot with sauce.
