Start by preparing the dough.

In a large bowl, place the yeast and pour in 50 ml of the water. Mix with your fingers to dissolve.

Next, add the sugar, the remaining water, the flour, and finally the salt. Begin kneading and continue for 3-4 minutes.

Now add the olive oil and milk. Knead again for another 3-4 minutes until the liquids are absorbed. At this stage, check if you need to add more flour. You want a soft dough that doesn't stick too much to your hands and the sides of the bowl.

Once achieved, cover the bowl with a towel and let it rise for an hour in a warm place. If the temperature is low, place it in a preheated oven at 120°F (50°C) for 20 minutes.

While the dough is rising, prepare the sauce.

In a small pot, add the oil and garlic. On medium heat, let it infuse for half a minute. Remove the garlic from the pot.

Add the tomato, oregano, and basil. Stir and simmer for 10 minutes. Turn off the heat and let it cool.

When the dough has risen, place it on a lightly floured surface and, using a sharp knife, cut it into the desired pieces, trying not to deflate it too much.

Take each piece and shape it into a boat with your hands. Repeat the process with all the pieces.

Place the peinirli on a well-buttered baking sheet, prick them inside with a fork, and add the turkey.

Bake in a preheated oven at 390°F (200°C) until they are lightly colored.

Remove from the oven, pour over the sauce, and bake for another ten minutes.

Finally, add the cheese, sprinkle with a little basil, and brush the edges with butter.

Bake until the cheese melts.

Remove from the oven and let them sit for 5 minutes.
