Khandeshi style Baigan bharta

Roasted Brinjal on a medium flame till well cooked. Cool peel and mash.

Roast Green chilli and garlic & make thecha.

Heat the oil in a pan & saute the onions till golden brown. Add mustard seeds and add cumin seeds. Mix it.

Add roasted peanut and mix well. Then add turmeric powder, thecha, and mash brinjal mix well & add salt as per your taste. Now add coriander leaves and cook for 5 mins in medium flame.

Baigan bharta is ready to serve with bhakri or chapati.
