📌Lauki Muthia - Doodhi Muthia - is a famous, delicious, and healthy snack from Gujarat. It is made by mixing grated bottle gourd (doodi), wheat flour, gram flour, and spices, steaming them, and then tempering them.
📌The natural water from the curd and doodhi is released into these muthia. Therefore, we don't need any water on top. Wheat flour and gram flour are added to this to form the dough for the bottle gourd muthia.
📌 We can pack this for lunch at school or office, and also have it as a hot breakfast with tea at home. We can eat it with green chutney, tomato ketchup, or whatever we like. It's a delicious and nutritious breakfast.
📌 We can also take Dudhi Muthiya with us while traveling. Because it's dry, it doesn't spoil for two to three days, as no water is used to prepare it.

Grate the bottle gourd in a mixing bowl. Now add all the spices, such as salt, sugar, yogurt, asafoetida, turmeric powder, Kashmiri red chili powder, and white sesame seeds. Squeeze lemon juice over the Eno soda and mix everything together.

Add a teaspoon of ginger-chili paste and coriander leaves and let it sit for 2 minutes, allowing the milk to release its water. Now add wheat flour and gram flour, mix well, and coat with flour.

Make fist-sized dough balls. These fist-sized dumplings are called muthia. Place the muthia firmly in a greased container and steam in a pressure cooker for six whistles.

After the pressure cooker cools, remove the muthia and cut it into small pieces. In a pan, add oil, mustard seeds, white sesame seeds, red chili, asafoetida, and curry leaves. After tempering, add the chopped muthia and cook on low heat until slightly crispy

Now squeeze lemon juice in it and garnish with finely chopped coriander leaves and coconut powder. Turn off the gas. Delicious and nutritious steamed healthy muthia is ready to eat.

You can eat Dudhi Muthiya with green chutney, tomato ketchup and hot tea and can also pack it in your tiffin lunch box. You can also take it while travelling. Due to its dryness, it does not spoil for two-three days, because no water is used in it at all.
