For the dough :Combine flour, salt and sugar in a bowl

Mix well and add oil and water

Knead into a soft dough and rest covered for 30 minutes

Blanch the green peas using sufficient water
- 5
Drain after 2-3 minutes and add the peas to a blender

Add the chilli, coriander seeds, salt and sugar

Add just enough water for blending

Blend to a smooth paste and transfer the mix to a bowl

Heat 1 tablespoon oil and temper with nigella seeds

After the seeds splutter, add the ginger paste

Sauté for 2 minutes and add the peas mixture

Mix and sauté for 1-2 minutes

Transfer the stuffing into a bowl

Now divide the dough into small balls to roll

Create a depression in each and add 1 teaspoon of the peas stuffing

Seal well and roll into a ball

Finish this process for all the dough balls

Grease the working surface and rolling pin with some oil

Heat enough oil to deep fry

At a time, roll one of the balls by gently flattening it

Add the rolled dough into hot oil and fry until light brown on both sides

Place the fried Kachoris on an absorbent paper for sometime

Serve warm with aaloor dom. Enjoy
