Ingredients

  • 2carrots
  • 1leek
  • 1onion
  • Clovegarlic
  • Large bowl of greens. Can be cabbage. Spinach. Kale
  • 2 tinschopped tomatoes
  • 1 tinwhite beans. Cannelli. Berlotti
  • Handfulsmall pasta
  • cubeVeggie stock
  • 2 teaspoonbasil
  • 2 teaspoonoregano
  • 1squirt ketchup
  • Salt and pepper

Steps

  1. 1

    Chop onion. Leek. Carrot and garlic. Fry in large pan until soft.

  2. 2

    Add the tins of tomatoes.

  3. 3

    Stir well and add herbs. Salt and pepper.

  4. 4

    Add the stock cube and using the tins from toms measure 2 tins of water.

  5. 5

    Stir and simmer. 10 mins.

  6. 6

    Add the chopped greens and tin of beans. Simmer 10 mins.

  7. 7

    Add the pasta. Simmer 10 more mins. Add the ketchup. Stir well.

  8. 8

    Best left overnight and served next day with crusty bread.
