Piccata chicken sauce with mashed potatoes

Cook potatoes with pinch of salt until very soft,strain and keep aside

Mashed potatoes in a bowl,stir to ensure your potatoes are well mashed.

Stir in 2 tablespoons of milk and 2 tablespoons of mayonaise

Mix potatoes and set aside

Slice chicken breast into strips and toast in flour

In a pan add 1 tablespoon of butter and 1 tablespoon of oil,shallow fry chicken strips. Do not over crowd the pan you can fry in two or 3 batch depending on size of your pan

In a sauce pan add onions,pepper and garlic stir. Add chicken broth,spices and lemon juice (optional)bring to boil.

Mix cornflour with water and add to sauce,allow to thicken.

Add more chicken broth if needed

Add chicken into sauce and simmer for 2 minutes.

Pour sauce over mashed potatoes

Or do not add chicken to sauce just put mashed potatoes in a place make a little hole in the centre and chicken strips then pour your sauce over chicken.
