Tomato Pulao (mumbai street style)

First for making rice-- wash and rinse the rice until the water is almost clear.soak rice in water for at least 30 minutes.

In a pan add 6-7 cup of water add salt and oil, let it come to a boil, then add soaked rice and let it come to a boil again.cook the rice on medium to high heat for 12 -15 mins.drain the rice and keep covered in the same pan until use.

Now heat oil in a pan add cumin seeds let them splutter, add onion and stir for a min or 2 on medium heat, add ginger + garlic stir again for a min, add all chopped veggies and saute them well, add salt and cook until slightly cooked, (for 2-3 min).

Add chopped tomatoes saute well and cook for a min or 2 until soft.

Add turmeric powder,red chilli powder and pav bhaji masala mix well until well combined.

Add tomato puree and cook for a min, add green chillies saute well, add lemon juice and add parboiled rice and mix well until well combined.cook covered for a min.or 2,switch off the heat, add coriander mix well and serve hot.

Tempting tomato pulao is Ready.
