Bring water to a boil and Cook rice fully. Then set aside for later.

While rice is cooking, Cut tops of peppers off and remove seeds. Start a medium-sized pot of water to boil.

Sauté onions and garlic in a pan. Untill they begin to carmelize.

Fire up the grill and let the coals get hot.

Dice the tops of the peppers as not to waste and also add color to your filling later on

Boil peppers for 5 minutes or until they soften slightly.

Once rice is fully cooked add it to the hamburger along with the pepper tops and onion. Add taco seasoning along with salt and pepper to taste.Be sure to only partially cook the hamburger as it will finish on the grill.

Once peppers have boiled and cooled for a moment add hamburger/rice filling to peppers. Remember, be generous. Your guests are hungry.

Place peppers on the grill for about 25 minutes. Or until peppers begin to char slightly.

Add mozzarella cheese to the tops and cover for about 4 minutes.

Remove peppers from grill and let rest for 5 mins.
