Doc's Tuscan Style Snow Crab Potato Salad

Ingredients

8 servings
  1. 6medium sized potatoes
  2. 4large hard boiled eggs
  3. 1 cupsnow crab meat (leg and body meat)
  4. 1/4 cupchopped artichoke hearts (trimmed)
  5. 1/2roasted red pepper (chopped)
  6. 1 tablespoonchopped shallots
  7. 1 1/2 cupsmayonnaise
  8. 1finely chopped basil leaf (fresh)
  9. 1 teaspoonchives
  10. 1 tablespoonparsley
  11. 1/4 cupchopped black olives
  12. 1 teaspoonpaprika
  13. 1 teaspoonsalt (add more to taste if desired)
  14. 1 teaspoonpepper
  15. 1/2 teaspoonlemon juice
  16. 1 dashWorcestershire sauce
  17. 1 tablespoonyellow mustard

Cooking Instructions

  1. 1

    Mix egg yolk, all seasoning, and all wet ingredients in a blender or a mixing bowl.
    Let settle in the refrigerator until potatoes are boiled and cooled.

    Boil potatoes until desired softness is reached. (poke with a small fork to check)
    Let cool to room temperature.

  3. 3

    Dice potatoes and fold in all other ingredients.

  4. 4

    Chill in refrigerator for 2 hours

  5. 5

    Serve cold
