Meatloaf is one of those things that can be reeeeally good or reeeeally NOT good. When it’s good, it’s medicinal. This is a good base recipe if you like your meatloaf sweet and tangy, meaty and moist. It slices like a dream hot or cold and makes a fab sandwich the next day. Sometimes I add bell pepper in it or on it. You can add any veg you like.

Ingredients

  1. 2 lbs80/20 ground beef
  2. 1sleeve crushed butter crackers, I used Ritz
  3. 2eggs beaten
  4. 1Chopped bell pepper
  5. 1Chopped onion
  6. 1heaping tbsp minced dried onion
  7. 1/2 tspsalt
  8. 1 tsppepper
  9. 1 tspseason salt
  10. 1 tspadobo optional
  11. 1 tspeach onion and garlic powder
  12. 1/4 cupketchup
  13. Tangy ketchup mix:
  14. 1/2 cupketchup
  15. 1heaping tbsp brown sugar
  16. 2heaping tbsp soy sauce
  17. to taste Pepper, onion and garlic powders

Cooking Instructions

    Preheat oven to 350. In a large bowl combine the meat with the next 10 ingredients. I use my clean hands to stir my meat mixture. I fold it over and over itself until it just fully combines. Don’t over mix it.

    In an iron skillet or glass baking dish shape your meat into an evenly shaped rectangle so it cooks evenly. My loaf usually rounds out a bit during baking. Slide it into the oven and bake uncovered 45 minutes.

    In the meantime, make your ketchup mixture. Combine all the ingredients and whisk. After 45 minutes, take the loaf out of the oven and spoon a heavy layer on top of the meatloaf to the edges. Bake 15-20 minutes longer, uncovered.

    Pull your meatloaf out of the oven and move it to a platter. Let it sit for about 5 minutes before slicing. I like extra sauce spooned over my slice.

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!

Made this recipe tonight and it’s so so good. The sauce is perfect and it does indeed slice like a dream. Can’t wait for a meatloaf sandwich tomorrow! Thanks Sherry!
