  1. 7 ozbutter (not margarine)
  2. 1 1/4 cupscornstarch
  3. 1 1/4 cupsall-purpose flour
  4. 3/4 cuppowdered sugar
  5. 1 teaspoonbaking powder
  6. 1 teaspoonvanilla extract
  7. 3egg yolks
  8. 1 teaspoonlemon zest
  9. For filling and decorating:
  10. as neededDulce de leche
  11. as neededFinely shredded coconut

    In a bowl, beat the butter until creamy.

    Add the sugar and beat until combined. You can do this by hand or with a mixer. Add vanilla and lemon zest.

    Once incorporated, add the egg yolks one at a time, waiting for each to integrate. Finally, add the cornstarch, flour, and baking powder (already sifted), and mix manually until you have a smooth but crumbly dough. Refrigerate for 30 minutes.
