Clean the shrimp. Boil in salted water for about 2 minutes. Drain and rinse with ice water. Drain very well.

Make a vinaigrette by mixing the lime juice, olive oil, tequila, salt, and pepper. Sprinkle the onion with salt to mellow it, rinse, then combine all the ingredients. Adjust salt and pepper to taste.

Serve with corn tortilla chips. (You can serve the spicy pepper on the side.)
