Ingredients

  1. 2 cupsgramham cracker crumbs
  2. 1/4 cupsugar
  3. 6 Tbspmelted butter
  4. 21/4 lbscream cheese room temp
  5. 1 2/3 cupssugar
  6. 5eggs room temp
  7. 1 cupBailey's Irish cream
  8. 1 tbspvanilla extract
  9. 1 cupsemisweet choc chips

Steps

  1. 1

    Preheat oven to 325 degrees, coat 9 in spring form pan with oil spray.

  2. 2

    Combine crumbs and 1/4 cup sugar in pan stir in butter. Press into bottom and 1" up sides. Bake until light brown, ~7 minutes

  3. 3

    Beat cream cheese unil smooth, gradually add in sugar, beat in eggs 1 at a time. Blend in Bailey's and vanilla.

  4. 4

    Sprinkle 1/2 of choc chips over crust. Spoon in filling, sprinkle remaining choc chips. Bake until puffed, springy in center and golden brown. 1 hr 20 minutes. Refrigerate
