I found a similar recipe by Chris Jacobs here on Cookpad. My kids love Carbonara but I’d never tried to make it before. I was really surprised by how easy it was to make and with ingredients I typically always have at home. Tasted great and only took 15 mins. Added a few tips I was given to stop the eggs scrambling.

Ingredients

4 people
  • 250 gramsSpaghetti
  • 3large eggs
  • 6 slicesbacon
  • HandfulParmesan cheese grated

Steps

  1. 1

    Add some oil to a large frying pan (big enough to mix the spaghetti in later) and start to cook the bacon

  2. 2

    At the same time cook the spaghetti as per the instructions. I used dried spaghetti so added to a pan of boiling water and cooked for 10/12 minutes

  3. 3

    Beat the eggs in a bowl, season with salt and pepper and add half the grated parmesan

  4. 4

    Once the bacon is cooked, put to one side off the heat. This is important as the cooling pan helps stop the eggs scrambling later.

  5. 5

    Once the spaghetti is ready, drain BUT keep a couple of tablespoons of the water.

  6. 6

    Put the spaghetti into the pan with the bacon.

  7. 7

    Stir the spared pasta water with the egg mixture. This warms the eggs which helps prevent scrambling.

  8. 8

    Pour the egg mixture over the pasta and stir.

  9. 9

    Serve immediately, season and add remainder of Parmesan as you wish.

  10. 10

    An Italian friend recommends grating nutmeg over the top.
