  1. 1/2 bunchgreen onions
  2. 8potatoes
  3. 3 1/2 tablespoonsbutter or vegetable shortening (about 50 grams)
  4. 5eggs
  5. cilantro
  6. salt to taste

30 minutes
  1. 1

    In a pot, add 5 cups of water, finely chopped green onions, butter, and salt.

    Peel and wash the potatoes.

    When the water boils, add the potatoes cut into irregular pieces. Boil for 15 minutes.

    Add one egg, beaten.

    Finely chop the cilantro.

    Add the remaining eggs to the soup, whole.

    Check that the potatoes are tender, serve hot, and sprinkle with cilantro.
